I am a registered dietitian and was eating a healthy diet, lean meats, low fat dairy, no fried foods, etc. However, about eight years ago I began getting severe GERD, pain in my right side as a result of a poor functioning gall bladder. I also had migraines, which were "passed down" from my Mom, but I was getting them more frequently to three times a week. I read Dr. Fuhrman's book, Eat to Live and it transformed my life. It made so much sense to choose foods based on nutrient density and that would heal my body, not harm it. I began eating plant-based and eliminated dairy entirely. The first week, I was already migraine free. By week three I was off Nexium (I was taking double doses) and by week six I no longer had gall bladder pain. I also had a low HDL, which I also thought was hereditary, but my HDL went from 42 to 69 in just three months. And I lost 15 pounds.
My husband and I were deemed infertile due to his poor sperm count. About two years after, he starting following a plant-based diet, to our surprise we got pregnant and we have a daughter. He has not got retested, so I can't prove that was the change. My Dad has also had a huge health transformation by following a plant-based diet. Two years ago, he had two blockages in his heart. He finally was motivated to listen to me and go plant-based and in the last two years has maintained a weight loss of 80 pounds (265 to 170) and brought his cholesterol from 260 to 165. He feels 20 years younger and has no sign of heart disease. Another random improvement for him is he was allergic to strawberries his whole life and now he can eat them with no reaction.
