In my mid-20's I decided I wanted to start weight-lifting to try to build muscle, so I joined a local gym. There, I met a trainer who suggested Nutritarian principles for eating, and suggested occasional fasting as well. I had grown up eating a standard American diet, and thought that building muscle meant eating meat and drinking protein powders. However, when the trainer mentioned suggested looking into Dr. Fuhrman's materials, everything came together. I finally saw that being strong and healthy didn't have to be at apparent odds with longevity and heart health. Dr. Fuhrman's Nutritarian diet provided a long-term, sustainable way of eating that maximized health, minimized disease risk, and helped me to look and feel better in the process. It just all made sense.
Little by little, my goal shifted from simply increasing muscle, to maximizing overall health. As part of this journey, I started reading and listening to Dr. Fuhrman's Eat to Live, Eat for Health, other articles/podcasts. I became convinced that both logic and nutritional science supported the nutritional model being proposed by Dr. Fuhrman.
I traded in my microwave and processed foods for a Vitamix and green smoothies, and haven't looked back. Interestingly, my wife and I had been trying to conceive a child for about a year, and it was around the same time that we really started to implement Nutritarian principles more seriously (including removing dairy from our diet) that we conceived. We now have five children, and they have all eaten a plant-based Nutritarian diet since birth. They range in age from 8-and-a-half to 5 months, and not one of them has ever had a single ear infection. They are all healthy, vibrant, and active. And I have lost 20 pounds.
However, my second child was born with congenital hypothyroidism, and we were able to ween him off Synthroid by following a strict plant-based diet that avoided gluten, soy, and goitrogens and incorporating foods rich in Selenium and known to promote healthy thyroid function. We also supplemented with kelp powder and Dr. Fuhrman's Pixie Vites. .
