Orange Sesame Kale Slaw with Avocado

Finely shredded kale is tossed with a citrusy sesame seed and cashew dressing, then topped with diced avocados. Simple, elegant and very tasty!

Ingredients

For the Dressing:
1/2 cup unhulled sesame seeds (see note)
1 cup raw cashews
3 organic oranges, zested, then peeled
1/2 cup Dr. Fuhrman's Blood Orange Vinegar or balsamic vinegar
water, if needed to adjust consistency
For the Salad:
1 bunch kale, stems removed and very finely shredded
1 avocado, diced
1 orange, supremed or cut into segments
1 tablespoon black sesame seeds (or unhulled regular sesame seeds)

Instructions:

In a high-powered blender, combine sesame seeds, cashews, orange zest, peeled oranges, and vinegar. If needed, water or orange juice can be added to adjust consistency.

Toss the shredded kale with desired amount of dressing. Place on salad plates, top with the diced avocado and orange segments and sprinkle with the sesame seeds.

Refrigerate leftover dressing and save for another use.

Note: If desired, sesame seeds may be lightly toasted for added flavor. Toast in a dry skillet over medium-high heat for 3 minutes, shaking the pan frequently.
