Dr. Ferreri discusses soy products and their nutritional properties, the sources of confusion in soy science, the relationship between soy and cancer, and carrageenan, a thickener used in many nondairy milks whose safety has been questioned. Among the topics addressed are the relationship between soy and cancer, the unique properties of soybeans, isoflavones, minimally process soy versus highly processed soy, soy protein and a closer examination of some of the studies done on soy. In addition, the issue of men eating soy is addressed. Dr. Ferreri also answers how much soy should be included in one's diet.
