Citrus Salad with Orange Peanut Dressing

An orange, blended with peanuts, cashews and a splash of vinegar, creates the perfect dressing to enhance this pretty salad.

Ingredients

For the Orange Peanut Dressing: (see note)
1 navel orange, peeled
1/4 cup unsalted lightly-roasted peanuts or 1/8 cup unsalted natural peanut butter
1/4 cup raw cashews or 1/8 cup raw cashew butter
2 tablespoons rice vinegar
1 teaspoon coconut aminos
1/4 inch piece fresh ginger, peeled
1 clove garlic, chopped
For the Salad:
15 ounces or 10 cups baby lettuce mix
1 ripe avocado, peeled, pitted and sliced
1 navel orange, peeled and sliced
1/2 small sweet onion, cut in half and thinly sliced
1 tablespoon unhulled sesame seeds, lightly toasted

Instructions:

Blend all dressing ingredients in high-powered blender or food processor until smooth.

To prepare salad, arrange avocado slices, onions, and orange rounds on top of lettuce.

Pour desired amount of dressing over salad and sprinkle with sesame seeds.

Note: For your convenience, Dr. Fuhrman makes a line of healthful bottled salad dressings. Dr. Fuhrman's Orange Cashew Dressing (about 1 cup) can be substituted in this recipe.

Absolutely delicious! Definitely company-worthy. The Asian-inspired flavor is now going to add welcome change to my menu on a regular basis. After eating this it occurred to me that I would never go back to bottled dressings!!

Outstanding dressing/salad. This was the first Dr. Fuhrman recipe I made after watching Dr. Fuhrman on PBS: Three Steps to Incredible Health ...back in 2012 I believe. I've made hundreds of recipes since and still going strong with this amazing gift of never ending recipes provided through Dr. Fuhrman's website ... recipes that at are BOTH healthy and great tasting. Instead of juicing an orange, I just peel a seedless one (or a tangelo) and put the whole thing in the blender. I LOVE this salad!

It doesn't call for juicing an orange it calls for the whole orange to go into the dressing.
