Salad for breakfast? Why not? Try tossing berries, apples, fresh fennel and cucumbers with a creamy cashew-hemp dressing.

Ingredients

1/4 cup diced fennel bulb
1 medium cucumber, peeled, thinly sliced in rounds and halved
1 cup blueberries
1 cup organic strawberries, sliced
1 green apple, peeled and sliced
1/4 cup chopped walnuts
For the Dressing:
1/3 cup raw cashews
2 tablespoons hemp seeds
1/2 cup unsweetened soy, hemp or almond milk
3 regular or 1 1/2 medjool dates, pitted

Instructions:

Combine fennel, cucumber, berries, apple and walnuts.

Blend dressing ingredients in a high-powered blender until smooth. Pour over vegetable and fruit mixture and toss.

This felt sinful and yet healthy at the same time! I didn't have fennel so I used endive instead, I also just used apples and cucumber. Though the endive wasn't my favourite I absolutely loved this breakfast. My family looked at me like I was cracked...but then again I'm getting used to that ;) One of my new favourites.

I started my ETL first day with this awesome salad. I cut down the ingredients for a single serving like this.
I am looking forward to eating this again!

1 apple
1/4 scant cup of thinly sliced fennel
1/3 cup blueberries
1/2 cup strawberries
1/2 cup cucumber slices
3 walnut halves

2 sm dates
1 oz cashews
1/4 cup of almond milk

I saw Dr. F. tell a member on Ask the Doctor to do a breakfast similar to this and I followed it - my blood glucose came down right away. It was: Fennel, red peppers, tomatoes, celery and raspberries. (or other berry.

This recipe tasted awful.  Fennel and berries just don't seem to go together for me.

I made this recipe, ate it all up and then went back and saw that it serves 3!!! That is how much I love this recipe. Ofcourse no lunch for me that day! ;)

This recipe is on the fall 2023 detox.  Nice salad; an interesting blend of textures and tastes.
