These pretty treats contain just five ingredients! Bake a batch of healthy cookies in less than 30 minutes!
Preheat oven to 350 F. Line a baking sheet with parchment paper. Mix together unsweetened coconut flakes, almond flour, baking powder and dates. Add non-dairy milk. Mix thoroughly, mashing dates into the batter with a fork or spoon. Form into small balls (about 1-2 tablespoon in size). Bake for 12-17 minutes or until golden brown. They should still be chewy inside. Let cool for 10 minutes.

These are really yummy. So yummy you could just eat them as dough. I super recommend these cookies. I made them for some SAD eating friends as a thank you gift and they loved them too. So great for non-nutritarian guests.

These are delicious! Light and fluffy texture and super easy to make. They are sweet from the dates, but definitely not overly sweet. The texture from almond flour and coconut is really smooth and doesn't give you that 'heavy' feeling that you can get from typical cookies. The batter is also really tasty and might even be a good frozen treat for those who like frozen cookie dough. Yummy!

Delicious and easy! Wish there was a bit of a snap to them. Very soft. Definitely will make again.
