Chocolate Cherry Almond Overnight Oats

Ingredients

1/3 cup steel cut oats
3/4 cup unsweetened soy, hemp or almond milk
1 tablespoon chia seeds
1 tablespoon ground flax seeds
1 tablespoon unsweetened cocoa powder
1/2 teaspoon pure vanilla bean powder, vanilla extract or almond extract
3/4 cup pitted fresh or frozen cherries, halved
2 tablespoons chopped raw almonds

Instructions:

Combine all ingredients in a bowl, refrigerate overnight.

Garnish with cocoa nibs, additional cherries or other fruit if desired.

This was good. I prefer fresh oats to overnight, so I soaked them 15 minutes. Could be a bit sweeter to balance out the cocoa. Next time I will try blending a medjool date with the milk.

This is really good, although mine looked nothing like the photo. How are the oats in the photo so white when there's cocoa powder added?  I would like the recipe for the actual photo, as that one looks delicious.

Heavenly. I love knowing this is waiting for me in the fridge first thing in the morning. I made this exactly as the recipe notes with dark, sweet, frozen cherries.

Ah thank you!  Glad you enjoyed it.  Subbed Dr. Furhman's Chocolate Chaga for the cocoa powder this time & toasted the almonds.

I don't know if I should ever rate a recipe since I never follow one! I view a recipe as a guide and do what seems good. Things I did differently:

1. raw cacao powder, probably a little less because it seemed like too much (it was not too much)

2. Dried cherries since I didn't have fresh or frozen.

3. Vanilla extract since I didn't have vanilla bean powder or almond extract.

Note: I used unsweetened vanilla almond milk because that's what I had on hand. I've made overnight oats with just water before and here's a little money saving tip – it's just as good made with water.
