Dark Chocolate Mousse

What’s for dessert? This so simple and so elegant dark chocolate mousse could be the answer!

Ingredients

3 1/2 ounces 100% cocoa unsweetened chocolate, roughly chopped
12 ounces silken tofu, drained and brought to room temperature
3 medjool or 6 regular dates, soaked in warm water until soft, then drained and chopped
1 teaspoon pure vanilla bean powder or alcohol free vanilla extract
1/2 teaspoon agar agar powder (see note)
Optional Topping Ingredients:
100% cocao unsweetened chocolate shavings
raspberries or blackberries
fresh mint leaves
raw almonds, toasted and chopped

Instructions:

Melt chocolate in the microwave in 30 second intervals, stirring each time, until melted. Set aside to cool.

Meanwhile, place silken tofu, dates, vanilla and agar in a high-powered blender and blend until smooth. Add melted chocolate and blend to combine.

Transfer the mixture into 3 ramekins or small dishes and refrigerate for 30 minutes. Garnish with your choice of toppings, if desired.

Will keep in the refrigerator for 3-4 days.

Note: Agar Agar is a vegetarian gelatin that is made from seaweed. It can be used as a thickening agent in a variety of recipes. If using agar agar flakes instead of powder, double the amount.

I love chocolate, but found this too dark as written. Intense. I'd recommend halving the chocolate, and adding more to taste.

Hi!  Please provide a recommendation (brand of) "3 1/2 ounces 100% cocoa unsweetened chocolate, roughly chopped"; is this the same as baker's chocolate?  I've never used this as an adult.  Thanks!

Yes it's the same as the Baker's Chociolate and I noticed Lindt makes a 100% bar now too but the Baker's is just fine.

This is the best chocolate mousse/pudding here, I think. very FATTENING, THOUGH. But 10 gr protein versus 3 gr in the Avocado Mousse one.  I only eat 28 grams of fat per day and this is 20! I wouldn't say it's all that "dark" compared to the avocado recipe. I was eating the one with avocado which was fine but you needed to slightly cover up the avocado with more flavorings and I add some almond milk. But this one is legit without doing anything other than the recipe!  I did soak the dates in almond milk, just because why not. Rated 5 stars after I typed this.

Try the recipe Chocolate Mousse by EngineerGuy.  There is no soy in that recipe.
