Avocado Toast with Shredded Brussels Sprouts

Ingredients

2 cloves garlic, chopped
3/4 pound Brussels sprouts, cut into 1/8-inch ribbons
1/4 cup walnuts, toasted and chopped (see note)
2 tablespoons raisins or currants
1 tablespoon nutritional yeast
black pepper, to taste
1 ripe avocado, mashed
4 slices 100% whole grain bread, lightly toasted

Instructions:

Heat 2 tablespoons water in a large skillet and saute garlic for 1 minute, add shredded Brussels sprouts and cook for 2-3 minutes, until warm and slightly wilted. Add a small amount of additional water if needed. Remove from heat and toss with chopped walnuts, raisins, nutritional yeast and black pepper.

Spread mashed avocado on toast then top with shredded Brussels sprouts.

Note: Toast walnuts in a small skillet over medium heat for 2-3 minutes until lightly toasted.

Whole grain, Ezequiel sprouted grain, Joseph’s flax bread in moderation are ok.

This looks fantastic! You could also use Finnish rye crakers available in most stores and are quite good and nutritrious. I use them

to spread avocadoes and top it with other things, now have some new items to add thanks to this recipe.

We had Avocado Toast with Shredded Brussels Sprouts for dinner tonight. It was pretty horrible. I'm not a fan of Brussel Sprouts and I wasn't surprised I didn't like this. I would rate it a 1 or 2 out of 5. I wouldn't eat it again.  I could choke it down, but just barely.  After two bites, I had to stop.

Perhaps can layer another sort sprout on top, i.e., raw sunflower sprouts (or raw broccoli sprouts if you tolerate broccoli).  And then add some garlic and onion powders into the mashed avocado for flavor.
