Crunchy Peanut Slaw

Whisk together a simple peanut butter dressing and toss it with sliced cabbage, grated carrots and chopped green onions. It’s so quick and so tasty!

Ingredients

3 cups thinly sliced green cabbage (see note)
2 carrots, grated
1 green onion, thinly sliced
For the Dressing:
2 tablespoons no-salt, no-oil-added peanut butter
1/2 teaspoon Coconut Aminos
1 teaspoon lime juice
2 teaspoons rice vinegar
3 tablespoons warm water
pinch cayenne pepper, or to taste

Instructions:

In a small bowl, whisk dressing ingredients together until smooth.

Combine cabbage, carrots and green onion and toss with desired amount of dressing.

Note: Packaged coleslaw or broccoli slaw mix can be substituted for the salad ingredients.

Unbelievable that this delicious recipe requires so little effort and prep time. It is a sophisticated dish that I cannot wait to bring to Christmas potlucks- likely with the inclusion of toasted sesame seeds!

Delicious, quick and easy with bagged coleslaw. Will definetely make again maybe with a little more lime j and red pepper flakes

This is one of my favorite quick recipes. Light peanut sauce but perfect. I followed a suggestion from the previous comment and added a sprinkle of sesame seeds... WOW, I'll do this every time from now on!

Really good! I used lemon instead of limes.

A nice change to the standard cabbage slaw tastes.

I added a teaspoon of Dr Fuhrman Blood Orange vinegar and it really enhances the dressing!

Very simple and delicious slaw. After reading others' suggestions, I added some sesame seeds, fruit vinegar (Dr. F's pomegranate - adds a touch of balancing sweetness), and grated ginger. Also used 4 green onions instead of just 1. This made it more of an Asian-inspired slaw but delicious.

Delicious!! I didn't expect much from this one, but the peanut butter gave it a kick. The rice vinegar, lime juice and coconut aminos just complement each other. I'll add ginger next time like the sugestion above.
