Tex Mex Salad with Easy Avocado Dressing

Keep things chill with this hearty but super simple salad. It’s perfect for a lazy summer (or anytime) supper!

Ingredients

For the Dressing:
1 ripe avocado, peeled, pit removed
1/2 lime, juiced
1 small clove garlic, chopped
1 tablespoon nutritional yeast
pinch cayenne pepper, or more to taste
For the Salad:
6 cups romaine lettuce, chopped
4 cups mixed baby greens
1 cup cooked black beans
1 cup frozen, thawed corn kernels
1 medium tomato, chopped
1/4 cup chopped red onion

Instructions:

Place dressing ingredients in a blender or food processor and blend until smooth.

Combine salad ingredients in a large bowl and toss with desired amount of dressing.

I liked this salad quite a bit.  Lots of flavor.  Make sure you use fresh ingredients to get the flavors to pop.

How long does the dressing keep in the fridge once made?

Stored in the refrigerator, in an air-tight container, it should last for 2-3 days.

Can 1/2 of a lime liquefy the avocado enough?

If you would like a thinner dressing, add water (a tablespoon or two) to achieve the desired consistency
