Blueberry Coconut Cream Oatmeal

This five-minute oatmeal breakfast is so tasty you might want to serve it for dessert.

Ingredients

1/2 cup old fashioned oats
1/2 cup water
1/3 cup soy, hemp or almond milk
1 medjool date or 2 regular dates, pitted
1/8 teaspoon alcohol-free vanilla extract
2 tablespoons unsweetened dried coconut
1 cup frozen blueberries, thawed
2 tablespoons chopped walnuts

Instructions:

Heat oats and water in a microwave for 2 minutes. Put cooked oatmeal in a high-powered blender along with non-dairy milk, dates, vanilla and coconut. After blending, pour blended mixture in bowls and top with blueberries and walnuts.

This wasn't bad, but I wish it was better.  The flavors aren't very complex.  It is mainly just sweet, and too sweet at that for me.  I would like to see a little more variety in the flavor.  Putting almond milk on it helped tone it down a bit.  Rating:  3 out of 5.

I love this recipe! I like to pour the coconut cream over any fresh fruit I have (berries, grapes, etc.) and top with a tablespoon of ground flax seeds.
