Mixed Greens and Berry Salad

Berries take the spotlight in this quick and easy salad. They are paired with a simple mixture of salad greens and topped with a creamy cashew and hemp seed dressing.

Ingredients

For the Salad:
1 head (about 6 cups) romaine lettuce
5 ounces (about 5 cups) baby spinach or mixed baby greens
2 cups fresh organic strawberries, sliced
2 cups fresh blueberries
For the Dressing:
1/3 cup unsweetened soy, hemp or almond milk
1/4 cup raw cashews
2 tablespoons hemp seeds
1 apple, peeled and cored
2 tablespoons dried currants or raisins

Instructions:

Arrange the greens on serving plates and top with berries.

Blend dressing ingredients in a high-powered blender. Drizzle dressing over the greens and berries.

Delicious salad! I threw 1/4 teaspoon of sesame seeds and a pinch of turmeric on top for crunch and to get my daily dose of turmeric.

This is a great one! I added red bell pepper to the salad to give it a little bite and off set the sweetness of the dressing. Very good!

I loved this salad! I didn't have any cashews or cashew butter so I used some almonds. The dressing came out great anyway - very, yummy!

Yes, both my hubby and I loved the salad and the dressing! He said, "we could have this every day"!

When we decided to "Eat To Live", we decided that getting a Vita-Mix would make it SO much easier. We had wanted one for quite awhile, so this was a great excuse, and since Christmas was almost here, we did it! It certainly makes the dressings much easier.

I didn't have applesauce, so I upped the soy milk to 1/2 a cup and threw 1/3 of an apple in instead. Worked out beautifully. I also added white beans and sunflower seeds to the salad. Very nice! The leftover dressing makes a wonderful dip for carrots.

I like to pour the strawberry juice in with the dressing ingredients so that the strawberry flavor gets into the dressing. This makes the dressing pink, which is a little weird, but it tastes good because the flavors get distributed better.

This is one of our favorite ETL salads!
I didn't have much luck trying to use raw cashews and found that the raw cashew butter worked better in my K-Tec blender. There also wasn't enough bulk for my blender to work well, so I double the raw cashew butter, the soy milk, and the applesauce and have enough dressing for two nights.
