Chocolate Cherry Cookies

Ingredients

3/4 cup dates, soaked for 15 minutes in warm water, then drained
1 very ripe banana
2 tablespoons raw almond butter or cashew butter
1 cup old fashioned oats (see note)
1/2 cup almond flour (purchased or ground from raw almonds)
2 tablespoons unsweetened cocoa powder
1/2 cup chopped unsweetened dried cherries
1 teaspoon alcohol-free vanilla or almond extract

Instructions:

Preheat oven to 350 degrees F.

Add dates to food processor and pulse until they are blended and start to form a ball. Add in the banana and almond butter and process until well-combined

Add in oats, almond flour, cocoa powder and vanilla extract and process until mixture forms a dough. If mixture is too wet, add more oats to adjust consistency. Add dried cherries and pulse again until just mixed.

Chill dough for 10 minutes. Drop by tablespoons onto a non-stick or parchment-lined cookie sheet. Bake for 15-17 minutes.

Note: For a smoother texture cookie, the oats may be ground into a flour using a food processor or high-powered blender.

These are fabulous!  I didn't need to soak my dates because they were super fresh and soft. My banana was also defrosted from frozen, so that may have added a bit of moisture. I flattened them with a wet fork to about 1/2 inch and baked for 15 mins.  Let cool completely & then to a cooling rack. Great texture, not doughy at all.

Delish!!! My cookies were a bit chewy but I liked that and was afraid of burning the bottoms if I cooked any longer. I will add some walnuts next time for extra crunch. I used oat and almond flour and they worked well. The only problem is how yummy these little cookies are. I ate three!!!  Not a low cal option, to be sure.

Delicious! I had to sub some walnuts for the almonds, and cranberries for cherries, but still an amazing cookie! Almost too sweet with all those dates.

I ground the oats to a flour first then ground the almonds and added two tablespoons of ground flax. I used an apple with half a squeezed lemon instead of banana. I ground the dates, apple and almond butter together then added vanilla. I added the wet ingredients to the dry and mixed by hand. I also added stevia sweetened dark chocolate chips (1/3 cup). These are dense, filling little cookies that keep the shape you start out with (no spreading). I flattened some and left others as balls.

Grind the rolled oats into a fine powder - this will make it more like a cookie and less like dough.

I just made this recipe. I followed it close, I was surprised that the dough consistency was perfect. I saved some of the juice from draining dates but didn't need to use it. I did cook them longer as Sandi suggested, she was correct. I will add more chocolate and some toasted walnuts to my next batch. I found dried cherries at safeway in the produce section.

Trader Joe's has frozen dark cherries. I will use them. Dried fruit tends to up the sugar content (meaning the drying process changes the fruit, I don't mean sugar is added).

I use Trader Joe's unsweetened, unsulfered dried bing cherries, just the fruit.  There are however, 19 grams of sugar from the dried fruit, so one might wish to reduce the dates.

My initial experience was like Amy's; however, I decided to cook them an additional 5 minutes, and then I turned off the oven and let them sit in the dying oven for an additional 5 minutes after that. That helped firm them up, but the consistency was more like a brownie than a cookie. But they were delicious nonetheless. I served them frozen, as I do with other bars like the no-bake apricot bars, and they are perfect as chewy bars, as opposed to cookies.

I just made these. I am not very successful with nutritarian baking though I was a great baker before. These taste great but they came out of the oven pretty much the way that they went in, like dough. I love the dough, but was expecting a cookier result. I gave it 4 stars for the flavor and because I think the fault is mine. I cannot make black bean brownies either, just the dough. Looking again at the picture (it is tough to see) I think I should have added more oats?
