Ingredients

1 cup pitted dates
1/2 cup raw cashew or almond butter
2 tablespoons unsweetened, natural cocoa powder
3 tablespoons ground chia seeds
unsweetened cocoa powder, chopped raw almonds or hazelnuts and/or unsweetened shredded coconut for coating

Instructions:

Add dates, nut butter, cocoa powder and chia seeds to a food processor and blend until very well combined.

Remove from food processor and form into balls. Roll balls in cocoa powder, ground almonds or hazelnuts or unsweetened shredded coconut.

Added perhaps 1/4 tsp vanilla extract as balance to the dark cocos powder. These are wonderful.

Any tips on processing the ingredients together without loosing most of it in the processor? Bought all the ingredients but don't want to mess up since the almond butter is pricey!

Angela- try processing the dates, Chia seeds and cocoa in the processor first, then add the more liquid ingredients, like vanilla extract and the almond butter. It should spin itself into a ball of dough and not be messy. I also divide my dough, removing half from the processor and adding mint extract, then process until combined. Super yummy Chocolate mint truffles! Good luck!

these are delicious! You could almost swear they're bourbon balls. (One of my favorites that I never have.)

I couldn't get mine to stay together very well, but I think my dates were on the dry side. Stayed together enough to enjoy, though! Yum! Company or gift worthy.

Really enjoyed these!  I added a little vanilla extract, used 1 Tbsp ground flaxseed in place of the chia seeds, and rolled them in cocoa powder, chopped peanuts, chopped pumpkin seeds & coconut.

These are soooo good!!!  I added a little madagascar vanilla & used extra brute cocoa powder (Cacao Barry) - fabulous!!!!

I roasted a handful of hazelnuts (filberts) in an oven 350 F for 12min-15min, then put them in a kitchen towel to rub off the skins (more or less), chopped them into small pieces and then rolled the truffles in them (you have to press them on a bit so the nuts will stick). They were absolutely delicious and reminded me of a healthy version of Ferrero Rocher : )

These are wonderful! Thanks to all of the tip on adding vanilla. I rolled some in coconut, a few in ground almonds and a few in plan Dr. F's cocoa powder. Just for kicks, I added a sprinkle of cinnamon in the cocoa powder before rolling the last two and have decided that's my favorite!

Made these for the first time last night to eat following the quick and easy kale and white been stew (yum). I used super gooey dates from Trader Joe's so they were soft. Reminded me of softer tootsie rolls. Today I decided to put them in the freezer. Much more firm. I enjoyed them so much. Followed exact recipe. Did not roll in anything though.

Delicious. My daughter said they are better than anything she could get from Ladurée. Insprired after hearing Dr. F on an audiocall talk about food prep say he's making them for his son. They are a bit of a "light at the end of the tunnel" for me:

- getting my family to enjoy WFPD

- finding craving alternatives

- knowing that others just eat 1

My batch yielded about 20 smaller balls.

I didn't have almond butter so I used natural peanut butter. Also used raw cacao, chia seeds ground in a coffee bean grinder, and we measured the dates by water displacement. Rolled the balls in mixture of coconut flour and raw cacao. Very good. Next time I will try using a little vanilla.

These are delicious and satisfying. I substituted peanut butter for the almond butter to give to a friend who's allergic to almonds, bakes with sugar, etc. (added vanilla as others suggested). The respondent's reaction: These are addictive! So good!

If you find your dates are a little dry, just soak them in water for about 10 minutes and they will come out perfect.
