Roasted Beets with Leafy Greens, Red Onions and Walnuts

Beets, roasted and then marinated in a simple caraway seed vinaigrette, provide gorgeous color and a distinctive, subtly sweet flavor to this salad.

Ingredients

2 medium red beets
1/4 cup red wine vinegar
2 tablespoons finely chopped raisins
1 tablespoon toasted caraway seeds, chopped
1 teaspoon finely chopped garlic
10 cups Boston or green leaf lettuce
1/3 red onion, thinly sliced
1/4 cup chopped walnuts

Instructions:

Roast beets at 350 degrees F for 50 - 60 minutes or until tender when pierced. Let cool and peel off the skins. Slice thinly.

Whisk together the red wine vinegar, chopped raisins, toasted caraway seeds and chopped garlic. Add sliced beets and marinate for 1 hour.

In a large salad bowl, toss beet and vinegar mixture with remaining ingredients.

This recipe is in the Heart 10 in 20.  We made it using yellow beets (less staining when handling).  It was delicious!

Lovely Salad 

I soaked the raisins and caraway in the vinegar overnight to soften so I wouldn't have them stuck in my teeth. 
I also used shallots in place of the red onion but I needed more of them because they are mild. 
This salad is as beautiful as it is tasty. Thanks to you Doc for making healthy food tasty as well!

We got fresh beets from the farm today and made this. Hits the spot. We used farmers market Walla Walla sweet onions too. So good

I would not make this again! I found Red Wine Vinegar too acidic !!
I think it would have tasted better with pickled beets!!

This was absolutely delicious. I blended the raisins, seeds and vinegar and then used that on the roasted beets. That way I didn't have to deal with caraway seeds becoming stuck in my teeth. I used arugula instead of lettuce.

Just finished making this - it is very, very good! The caraway seeds are a great addition and give it a wonderful flavor. Give this recipe a try ... you won't be disappointed. Would be great for a dinner party!

This sounds really yummy! I make a similar roasted beet and walnut salad based on one from Whole Foods. It uses balsamic vinegar as a dressing with a little raw tahini, beet liquid and apple cider vinegar. It also has roasted sliced red onions and some thinly sliced basil. The added greens sound great! Chard might work well, too. Will be trying this one out soon.
