Artichoke Heart Quickie

Frozen artichoke hearts are at the center of this satisfying, 3-ingredient main dish.

Ingredients

1 box frozen artichoke hearts (no added salt or seasonings)
1 cup no-salt-added or low sodium tomato sauce
8 cloves garlic, skins removed

Instructions:

Heat artichoke hearts in microwave oven according to package directions; set aside.

Heat whole garlic cloves (if chopped before heating, the garlic may burn) in microwave oven for one minute. Let cool enough so you can mince them by hand or use food processor.

In microwavable plate or bowl, place cooked artichoke hearts on bottom, sauce on top, then the minced garlic on top of sauce.

Heat in microwave oven until evenly heated.

NOTE: Add more or less garlic according to taste. Don't skip the step of heating the garlic--it will be too strong and change the flavor of the meal. This combination looks nice on the plate and is quick to make!

How do you serve this recipe? Do you serve this over rice or pasta or just eat it straight as a main course or side dish?

I know this reply is reeeeeeeallllly late.....but I wanted to write anyway.  I eat it straight, but as a side dish it would be nice too!  Sounds good with pasta, but with rice.....I dunno.......!  =)

Why would you use a microwave? There are no live enzymes in your food when you microwave it. Not a good idea if you ask me.

I used the microwave, my favorite way to cook vegetables. I layered the artichokes and sauce and topped it with KAL nutritional yeast for a "cheesy" topping. Very good. Thanks

I made this recipe; however I did it all on the stove. I also used canned artichokes. This was good! Very simple and easy recipe. I just sauteed the garlic, put the tomato sauce in, and then added the artichokes. Then I let it simmer for a few minutes. Now I know how I can use leftover artichokes!
