Almond Balsamic Vinaigrette

Ingredients

3-4 cloves garlic, unpeeled
3/4 cup water
1/3 cup balsamic vinegar
1/4 cup raw almonds
1/4 cup walnuts
1/4 cup raisins
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon onion powder

Instructions:

Preheat oven to 350 degrees F. Roast unpeeled garlic in a small baking dish for about 25 minutes or until soft. When cool, remove the skins.

Blend the roasted garlic with the remaining ingredients in a food processor or high-powered blender.

I thought this recipe was perfect! I did use only 3 garlic bulbs because I was afraid of the sheer amount of raw garlic, and it was plenty strong for my taste. I will be making this one again and again! Thank you Dr. F!

This is really delicious. I am a garlic fanatic, so I used all 4 cloves. I also used white balsamic vinegar. It's like a creamy garlic dressing with slight raisin/sweet undertone. I am also definitely going to make this over and over again. I was excited at how good it was actually!

This is great over what I dubbed "Man Salad" - romaine, grilled portobellos, avocado, pumpkin seeds, tomato. I roasted the garlic, to mellow the flavor, and it worked great, since I was using it the same day I made it - no time to let it set a day. Take the time to blend until smooth, and refrigerate until cold.

This dressing is amazing. I didn't have any raisins so I put dates instead and I put fresh basil instead of dried and it was excellent. My booyfriend who is pretty fussy about his salad dressings absolutely loved it. This recipe is going to be filed under "my favorites" in my recipe book!

This is an excellent dressing! The only change I made in the recipe was to use brown rice vinegar instead of roasted garlic rice vinegar. After storing in the refrigerator it was a little thick, so I thinned it with water. Loved it!

This turned out really well! I used fresh basil, sunflower seeds instead of almonds, dates instead of raisins, and just 1 raw garlic clove. It turned out sweet but good. I then added a splash of olive juice and it was AMAZING!

i LOVE garlic and 6 cloves was "too strong to eat at work" although delicious. Second time around i did 4 cloves and still a bit too garlicky. Definitely eat this with someone who loves you unconditionally and not before your staff meeting!

Great dressing will make time and again!

Very flavorful and fresh! For a quick prep, I put the raw almonds and the next 4 ingredients in a sandwich bag for later use. When I'm ready for a new batch, I pop the garlic cloves in the microwave on 30% power for a few minutes, add the cooked garlic, and ingredients in the bag to the vinegar and water and whirl!

This is a super tasty dressing. A little goes a long way. I don't bother roasting the garlic and only use 1 large clove. I also add 1TB stone ground mustard. Nice and quick!

I could only get 2 servings from this dressing when using it to dress a pound of cooked/raw veg. The flavor is great though, I just tossed the foil packet of garlic in the toaster oven as I prepped dinner and before I knew it, it was done! Will make very often.

Delicious dressing. I've served this to my husband and myself so many times ... Over a year now. Every lunch/dinner guest loves this recipe. Tonight I added it to mixed greens and spinach along with red grapes, apples, celery, red pepper, mushroom, etc., all organic. It was mouth watering. Every single person just raves about this dressing. And it's so quick and easy to prepare. I don't always roast the garlic ... Winner either way. Great way to start the dinner ahead, especially for non-ETL's.

I used garlic powder, to sub the garlic (about 3/4 tsp) and agave nectar (about a tsp) as a sub for the raisins. This is the most delicious thing I have ever made. Holy cow. Thank you for this brilliant recipe!!!

This dressing is delicious and very versatile. I made it with pomegranate balsamic vinegar which gave it more depth. I tossed it with roasted vegetables and tofu, served over arugula.

This is a nice change from the other dressings. I would recommend that you double the recipe so that there is enough to blend more easily. I suppose it would blend better if you soaked the almonds first.
Anyway, it's a great dressing.

My favorite dressing! I always have a batch in the fridge. I make a batch every Sunday and Thursday. No idea how long it keeps because it goes quickly. My whole family loves this dressing. The only change is that I use 2 TBS almond butter in place of the almonds. I use 3 cloves roasted garlic. After it chills I always need to thin it before using.

I made the mistake of not roasting the garlic, it's really good but it was too spicy and I could barely stand my own breath after, my poor family :p I'll make it again with roasted cloves, pretty sure it will be perfect then!

No need to change a thing in this recipe except a little extra water sometimes!  I make a triple batch - it keeps very well in the fridge.  It seems thick, but after it's on your salad and tossed in, it will loosen up a bit and it clings well to your salad.  You will be spoiled with this and not even have a desire for store bought SAD basalmic vinegrettes.

I added nutritional yeast, a bit more H2O & pepper to the mix, then blended. I sautéed mushrooms, yellow bell pepper, along with some diced tofu (on medium/high heat & constantly flipped it).

When the veggie sautéed mix was at its end, I added this dressing to the sautée pan, got it all good & hot & used it as a hot dressing on my leafy green salad mix then dusted it with the cashew psudo parmesan cheese concoction & it turned out wonderful!

Delicious, although a little thick, I had to add an extra tablespoon of water and an extra 1/2 tablespoon of balsamic to loosen it up a bit.  Thank you for an alternative dressing that tastes GREAT!
